28th June 2013: Cacao Banana Protein Smoothie

Serves 1 or 2 depending on milk added

Ingredients:
  • 1 Organic banana
  • 1 Organic Egg
  • 1tb of Cacao Powder
  • Milk to cover content in blender (Can use almond milk, raw milk or a substitute). 
  • Ice (optional)
  • Whole rolled oats (optional)






Put it all in a blender as shown above and wallah! Easy as 1,2,3.

26th April 2013: Mexican Style Stuffed Tomatoes

My husband and I have been obsessing over these quick and easy delights. Good for a snack/side dish or main depending on your appetite.

Ingredients:

  • Large tomatoes with the tops cut off and then use a spoon to scrape the inside out until it's hollow.
  • Mince meat (pre cooked) and add seasoning to taste. (We like to use taco seasoning).
  • Avocado diced.
  • Red onion thinly sliced.
  • Mushrooms.

Instructions: Place all the ingredients in a container and mix together. Scoop desired amount into each tomato then add more cheese on top for taste. Place on oven tray and put on 180 degrees celsius for around 15-20 minutes. Once the outer layer becomes soft then they are ready to be eaten. 

We like to add a small amount of either sour cream or whole egg mayo on top. You are probably thinking "whole egg mayo!" I know, it's strange but boy does it taste good!

The stuffed tomato recipe is such a quick an easy dish and you can change the ingredients around to suit. Simple dish and an easy way to hide vegetables from the children by cutting them up really small and mixing into the mince meat.
